Salad!

2 cooked chicken breasts (skin off)
1
tsp dijon mustard 2 tbs lemon juice
1
tbs olive oil 2 cups watercress sprigs
1
handful of snow peas
1
avocado, flesh chopped
2 red radishes cut into match sticks
1
large tomato chopped
Combine
mustard, lemon juice and olive oil in a small bowl.
Season to taste with sea salt and freshly ground black
pepper. Combine the remaining ingredients in a large
bowl and toss with a little salad dressing.
