Coconut Oil & Cooking:One Simple Shift That Can Dramatically Improve Your Health: by Jenni Madison of Coconut Magic.

Today, Governments, Scientists, Health Practitioners and Medical Doctors are placing an increased emphasis on diet as being the single most important factor in health and disease prevention. This includes recommending that people replace their regular cooking oils with virgin coconut oil to reduce the build-up of oxidized cholesterol in the arteries and to enhance immune health.

To maintain optimal food nutrients and make a cooked meal as healthy as possible it is important to cook with (heat) oil that is stable. The more stable the oil the higher it's smoke point, meaning it does not breakdown, oxidize and become toxic in the food and body.

When you heat an oil that is sensitive to light and/or heat it is damaged. When you cook food using unstable oils, the entire meal becomes toxic from the oxidized oil and you ingest an enormous amount of free radicals (unstable oxygen). Research has shown that the major cause of free radical damage to our cells, organs and skin is from ingesting oxidized oils.

Olive oil is one of the healthiest oils we can consume, rich in nutritional value and oleic acid. Sadly it is often used for cooking, making it a perfect example of how a healthy oil in its raw state, becomes unhealthy once heated. Olive oil is monounsaturated and therefore susceptible to damage (oxidation) once exposed to heat and higher temperatures. The smoke point temperature of olive oil remains a controversial topic. Consideration must be taken to if it is refined, cold pressed, virgin or extra virgin and so on. Olive oil is delicious and to be safe is best consumed raw.

Coconut oil is the most stable of any known butter or oil. It can be heated to temperatures as high as 170 degrees Fahrenheit. Therefore, if you are going to heat or cook any food coconut oil should be the only oil used. This means using coconut oil in place of butter, margarine, olive oil, canola oil, corn oil, safflower oil, grape seed oil, peanut oil etc. Unlike these oils coconut oil does not form dangerous trans fatty acids when heated because it is a completely saturated fat.

Coconut oil is not just healthy for cooking it also helps protect food nutrients and offers unique healing properties when used both internally and externally.

Olive oil, fax seed oil, hemp oil, avocado, nuts and seeds are all an excellent and essential source of healthy fats. To receive the health benefits of these fats they must only be ingested in their raw state. I continue to use olive and flax oil for my salad dressings and only coconut oil for cooking and baking. It is a small shift to make for enormous health (and beauty) benefits.

I do believe we receive powerful nourishment and nutrition when we take our food as it is found direct from its source, raw. I also however enjoy the creativity, delicacies and comfort of a warm cooked meal. Especially during these colder winter months. For this I am grateful to have discovered virgin coconut oil for safe and healthy cooking.

Calming Cholesterol - The Natural Way By Miriam Young, Medical Herbalist.

 

Winter can be a time when our cholesterol levels escalate due to an increase in comfort food, and due also to the fact that it is far too chilly to get out of bed in the mornings, and so we have a tendency to exercise less.

What is Cholesterol?
Cholesterol is essential to our health. Cholesterol makes up more than 50 percent of our cell's membrane; it plays a major role in fat digestion and is a pre-cursor of our hormones, including progesterone and oestrogen. The liver produces and regulates our cholesterol levels. We need cholesterol to digest and transport saturated fats around the body. There are two types of cholesterol, LDL (low density lipids) and HDL (high density lipids). LDL clogs up our artery walls, while HDL works to clean the walls, by helping excrete saturated fats via the liver.

What's wrong With My Cholesterol Being High?
High cholesterol and clogged arteries have been linked since the 1960's. As clogged arteries can lead to heart disease and ultimately heart failure, getting our cholesterol back to normal is of prime importance. Problems may surface when cholesterol levels start to creep up above 6.5 millimoles/litres, at this point; heart attack risk starts to rise.

What Should I Avoid?
The liver is involved in many metabolic processes, two of the simplest functions being neutralising toxins and processing fats. If you avoid highly processed foods, with preservatives, junk food etc, and stick to a whole food diet, then your liver has more energy to concentrate on fat burning and your cholesterol levels are more likely to balance.

Cholesterol is found in meat, dairy products and in fatty, fried foods. Many margarines, claim to be cholesterol reducing, however many of them contain trans-fatty acids, which the liver does not recognise and cannot break down, as they are highly processed. Butter is a real food, it comes from a cow. I generally encourage individuals with high cholesterol to reduce their junk food, red meat, fried food consumption, and cow's milk, before getting them to reduce butter, yoghurt and cheese etc.

Dr Mary Enig, a nutritional biochemist tells us to eat fat to lose fat. She informs us that people from every culture in the world ate fat including lard, butter, cream, fish, eggs and coconut. And ancient people did not suffer from obesity or high rates of heart disease. Our body needs fat. Most things in moderation is the key here and of course each individual is different.

What Should I Eat?
Eggs - Dr Andrew Rochford from Channel 9's 'What's Good for you' ate 4 eggs per day for 2 weeks. By the end of his egg challenge his cholesterol had substantially reduced!

Brisbane cardiologist Dr Karam Kostner, states that 'people who eat a lot of eggs actually shut down their bodies production of cholesterol. So the more eggs somebody eats, the less cholesterol our body produces. So that's why a lot of people who eat a lot of eggs don't get heart disease necessarily.'

Apples, Avocadoes, Grapes, Grapefruit and Blueberries - In separate studies, these fruits have been shown to raise HDL (good cholesterol) and lower LDL (bad cholesterol), blueberries have been shown to do this as effectively as statin, a cholesterol lowering drug!

Healthy Oils - Not all fats are bad for you or will raise your cholesterol levels. Essential Fatty Acids are found in flaxseed, coconut oil, and evening primrose oil etc. They have a heart protecting effect and will have a cholesterol normalising effect.

Vegetarian Diet - Although a vegetarian diet does not suit everybody, Vegetarians tend to have lower cholesterol, lower rates of heart disease as well as lower incidence of bowel cancer etc. Genetics however do play a role and it is possible for a vegetarian to have high cholesterol levels. If your parents/grandparents livers tended to produce high cholesterol levels, then there is a strong possibility that your liver will as well.

Herbal Medicine and Soluble Fibre to the Rescue
The herbs, Garlic, Cinnamon, Ginger and Cayenne Pepper as well as Globe Artichoke, Turmeric and St Mary's Thistle (major liver detoxifying herbs) and Psyllium Husk are all used by Medical Herbalists in order to reduce cholesterol. Green and white tea is also known for their alkalising, anti-oxidant as well as cholesterol reducing properties.

Psyllium Husk is classed as a soluble fibre and foods high in soluble fibre reduce LDL by reducing it's absorption within the intestines. Soluble fibre will also bind with cholesterol and pull it out of the body, bulking up the feces.

What Else Can I Do?
Do you exercise regularly? Exercise helps reduce heart attack risk by reducing LDL and increasing HDL. I have had a number of clients who have reduced their cholesterol levels back to a normal level simply by walking an hour or more per day and/or swimming.

Lose Weight with a Liver Detox
If you find it both difficult to lose weight and reduce your cholesterol levels, chances are you will have a toxic and over-loaded liver. The liver is the supreme organ of metabolism, and a toxic liver can be the reason why after so much effort little weight is lost, or why after a initial loss of weight a person may put it straight back on again. Short and Sweet:Thai Seafood Salad!

Thai Seafood Salad Serves 6-8

DRESSING:

½ cup lime juice ¼ cup fish sauce ¼ cup palm sugar 1-2 fresh red chillies, seeded and sliced finely 1 garlic clove, peeled and crushed 100ml lite coconut cream

SALAD

28-30 large cooked prawns, peeled, cleaned o and cut in half lengthwise 4 eschalots, peeled and sliced 1 lemon grass stalk, tender centre part only, sliced finely 3 kaffir lime leaves, shredded 150g shimeji mushrooms, trimmed (if not available, use oyster mushrooms) leaves from 1 bunch of mint 8 spring onions, cut into 2cm lengths

To make the dressing: put all the ingredients in a screw top jar and shake.

To make the salad: just before serving, place all the salad ingredients in a bowl and toss together, then pile on to a large serving plate and pour over the dressing to taste. Serve immediately.

Chicken Surprise A couple went for a meal at a Chinese restaurant and ordered the 'Chicken Surprise', The waiter brought the meal, served in a lidded cast iron pot. Just as the wife was about to serve herself, the lid of the pot rose slightly and she briefly saw two beady little eyes looking around before the lid slammed back down.

'Good grief, did you see that?' she asked her husband. He hadn't, so she asked him to look in the pot. He reached for it and again the lid rises, and he saw two little eyes looking around before it slammed back down. Rather perturbed, he called the waiter over, explained what was happening, and demanded an explanation.

'Please sir,' said the waiter, 'what you order?' The husband replied, 'Chicken Surprise.' . . . . 'Ah! So sorry,' said the waiter, 'I bring you Peeking Duck!' ' "
